Flavored simple syrup is a great way to enhance your favorite drinks and desserts and making simple syrup at home couldn’t be easier. Floral and herbaceous, lavender is one of my favorite simple syrups to make and elevates up everything from my morning cup of coffee to some of my favorite classic cocktails. With just three ingredients discover just how easy making lavender simple syrup at home can be.

Whether it’s my favorite hand lotion or the coziness of a lavender latte I absolutely love the calming nature of lavender. After making a batch of my delectable lemon lavender sable cookies I had some leftover dried lavender buds to use and making lavender simple syrup was the perfect choice.
What is simple syrup?
Simple syrup is a combination of sugar dissolved in water. Traditional simple syrup is an equal 1:1 ratio of sugar and water. Thin simple syrup is less sweet with a less viscous texture with a 2:1 ratio of water to sugar. Thick simple syrup is 2 parts sugar to 1 part water with a sweeter flavor. You can use use a variety of sugars to change the dynamics of your simple syrup. Standard granulated white sugar makes a good standard simple syrup but you can also use demerara, honey or coconut sugar depending on your preferences.
How to use Lavender Simple Syrup
You can use lavender simple syrup anywhere you’d like to add a bit of floral sweetness. Add lavender simple syrup to cold drinks like lemonade or iced tea, or make a cafe-style hot or iced lavender coffee right at home. You can also use lavender simple syrup to make a number of delicious cocktail ( I especially like to make a refreshing Lavender Tom Collins!). I also like to drizzle lavender syrup over lemon or vanilla cake.
How to Make Lavender Simple Syrup
Lavender simple syrup is well, quite simple to make. Firstly make sure you get culinary lavender for any edible purposes (non culinary lavenders can be on the bitter side). If getting a vivid color is important to you look for Ultra Blue Lavender for a more violet color.
In a medium saucepan combine sugar, water and lavender and bring to a boil making sure the sugar fully dissolves. Remove the pan from the heat and cover, allowing the simple syrup to steep for 20-30 minutes. Strain out the lavender buds and transfer the simple syrup to a clean glass jar (I absolutely love these adorable tulip jars!). Lavender simple syrup can be stored at room temperature for 1 week or in the refrigerator for a month.

Homemade Lavender Simple Syrup
Equipment
- medium saucepan
- strainer
- glass jars
Ingredients
- 1 cup water
- 1 cup sugar
- 4 tbsp dried culinary lavender buds
Instructions
- Combine water, sugar and lavender in a medium saucepan and bring to a simmer until sugar is fully dissolved.
- Cover and remove from heat, allow to steep for at least 20 minutes.
- Strain the lavender and pour into clean glass jar. Serve as desired.

Just made this and I love it! I used dried culinary lavender. I let it steep for at least the 20 min she recommended (I like a strong herbal flavor) and honestly it may have been longer since I forgot to set the timer haha. In my opinion, this is the perfect ratio of lavender to sugar etc. thanks for sharing the recipe and tips!
