Fitting in breakfast on a busy morning can be a challenge, but just because breakfast is fast doesn’t mean it can’t be pretty and tasty as well. Smoothie bowls are one of my favorite quick and healthy breakfast options and there are endless ways to customize. Making your own smoothie bowls at home is also far less expensive than going out to that super bougie smoothie cafe. My Dragon Fruit Smoothie bowl has no added sugars and is a beautiful and delicious start to your day.

What is Dragon Fruit?

Dragon Fruit Smoothie Bowl

Dragon fruit, also known as pitaya, is a tropical fruit in the cactus family. Originally indigenous to Mexico and Central America dragon fruit is now cultivated in subtropical climates in southeast Asia, Australia, India, the United States and the Caribbean. The name dragon fruit comes from the brightly colored exterior of the plant. Interiors of dragon fruit come in either white or bright pink. Dragon fruit has a texture similar to kiwi and tastes like a cross between a pear and a sweet watermelon.

How to Make a Dragon Fruit Smoothie Bowl

Smoothie bowls are very easy to make. The one thing you’ll need is a good high speed blender ( I love my vitamix blender and this ninja blender is a great moderately priced option). Instead of using fresh dragon fruit (which can be hard to find and expensive) I like to use frozen dragon fruit puree which is widely available in the freezer section. Frozen dragon fruit puree can be found in individual packages or as cubes.

To make this smoothie bowl I put Greek yogurt (you can also use your favorite plant based yogurt if vegan) along with dragon fruit puree, frozen mango chunks and pineapple into the blender and blend until smooth. After pouring it into a bowl you can to with whatever you like. Fresh fruit and homemade granola are great options but I like the texture and health benefits I get from cacao nibs and chia seeds as well as coconut flakes.

Equipment

  • Blender

Ingredients
  

  • 1 cup Greek Yogurt
  • 1/2 cup dragon fruit puree can be found frozen in packets or cubes
  • 1/2 cup diced mango
  • 1/2 cup pineapple chunks

Instructions
 

  • Place all ingredients in a blender and process at medium to high speed until smooth.
  • Transfer to a bowl and add your favorite toppings
