Warm, light and crispy; there are few things better on a weekend morning that waffles for breakfast. Unless those waffles just happen happen to be chocolate waffles. These waffles are indulgent without being too sweet, and are perfect for a lazy morning in your pajamas or a fancy weekend brunch. Whip up a batch of my Decadent Chocolate Waffles and turn any morning into a celebration.

History of Waffles
Waffles are a popular breakfast and brunch treat throughout the world and have a long history. Waffle irons with the traditional honeycomb pattern date back to the 1200s in England and fast became a popular street food throughout Europe. In the 1600’s the waffle made it’s way to the United States with Dutch settlers and in the early 1900’s the first electric waffle iron was created.
How to make chocolate waffles
These chocolate waffles are part quick bread and part souffle. Using 1 large bowl and 2 medium bowls (deliciousness sometimes means lots of dishes, but these waffles are definitely worth it) you will prepare separate parts of the batter. In the largest bowl you will mix together the flour, cocoa powder and all of the dry ingredients. In one of the medium bowls combine the milk, egg yolks, oil and vanilla; while in the other bowl beat the egg whites into stiff peaks. Stir the milk mixture into the flour mixture (it is completely fine if there are a few lumps) and then fold the egg whites in.
Making the batter this way results in a waffle that is wonderfully fluffy and light. All that’s left is to cook up the waffles in your waffle iron following the directions given with your iron (every waffle iron is slightly different, but I’ve had this waffle iron for years and absolutely love it).
These chocolate waffles taste like brownies (and who doesn’t love the idea of brownies for breakfast?) and toppings are only limited by your imagination. I personally love topping these chocolate waffles with fresh whipped cream and berries; but chocolate sauce, peanut butter, homemade marshmallows ,caramel or ice cream would also be great.

Decadent Chocolate Waffles
Equipment
- waffle iron
Ingredients
- 2 1/4 cup all purpose flour
- 1/2 cup cocoa powder
- 1/3 cup sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp kosher salt
- 2 large eggs, separated
- 2 cups milk
- 1/2 cup vegetable or canola oil
- 1 tsp vanilla extract
Instructions
- Preheat your waffle iron per manufacturer's instructions.
- You will need 3 bowls, 1 large and 2 medium. In the largest bowl combine flour, cocoa powder, sugar, baking powder, baking soda, cinnamon and salt and whisk to combine. In one of the medium bowls whisk together milk, egg yolks, vegetable oil and vanilla extract; in the other bowl beat the egg whites with an electric mixer into stiff peaks.
- Add the milk mixture to the flour mixture and stir to combine (there may be a few lumps, which is fine). Fold in the egg white mixture.
- Brush the waffle iron with butter and add the batter using 1/3 cup (or more depending on your waffle iron) and cook per manufacturer's instructions. Serve with fresh whipped cream, berries, chocolate syrup or whatever toppings you wish.
