Chicken and rice is a staple dish in kitchens around the world. From Spanish paella to Indian biryani nearly every country has it’s own version of chicken and rice. This version is French inspired, with delicate leeks and hearty mushrooms, and is a snap to make. Using just one skillet this chicken with rice, leeks and mushrooms is equal parts cozy and refined. The best part? You can go from cutting board to table in 30 minutes. Quick, simple and delicious, it’s easy to see why this chicken with rice, leeks and mushrooms is a regular in my weeknight dinner rotation.

How to clean leeks

First, let’s talk about leeks for a bit. As part of the onion, or allium family, leeks are related to garlic, chives and shallots (be sure to take a look at my Mashed Potatoes with Leeks). Leeks look like a giant scallion and have a mild delicate taste. To prepare leeks slice the white and light green parts of the leek into narrow rings and rinse them in a bowl of cold water, this will allow any any loose dirt to sink to the bottom.

I don’t know about you guys, but during the work week I am queen of the one pot dinners and make many versions of chicken and rice. Start out sauteing some veggies; add some chicken and seasonings, as well as some rice and chicken broth and the rest of dinner is pretty hands off (which is the perfect time for me to prepare my work lunch and snacks for the next day). There’s a reason this basic formula, with different veggies and spices) is repeated in kitchens around the world. Chicken and rice is quick, easy and family friendly. For this version I start by sauteing leeks and mushrooms until the leeks are soft an fragrant. I add a bit of thyme (which always pairs nicely with mushrooms), the chicken and chicken broth, along with a bit of salt and pepper. After that just sit back while the stove does it’s magic and you’ve got a got a simple and tasty dinner on your plate.

Chicken with Rice, Leeks and Mushrooms

Chicken with rice, leeks and mushrooms is an easy and impressive one pot meal. Perfect for weeknight dinners this one skillet dish will have you craving more.

Equipment

  • 1 large skillet

Ingredients
  

  • 1 tbsp olive oil
  • 2 leeks white parts sliced and cleaned
  • 8 oz Portobello mushrooms sliced
  • 1 tsp dried thyme or 2 tsp fresh
  • 1 pound chicken breast cut into bite sized pieces
  • 1.5 cups long grain rice
  • 3 cups chicken broth
  • 1 tsp salt
  • pepper to taste

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add sliced leeks and mushrooms and cook for 3-4 minutes.
  • Add the thyme, chicken, rice, chicken broth, salt and pepper. Cover and cook until all the liquid is absorbed and rice is cooked, about 15-20 minutes.

Notes

  1. This dish is delicious on it’s own or topped with grated Parmesan cheese.
  2. If using brown rice your cook time will be longer, about 40 minutes.

    Do you think you could use leftover turkey in this dish instead of cooking chicken from raw? I love the combination of flavours but I need ideas for leftovers!
