These buffalo chicken meatballs are packed with veggies and give you all the flavor of buffalo wings without the hassle. History of Buffalo Chicken Wings
Buffalo chicken wings were first created in 1964 at the Anchor Bar in (where else? ) Buffalo, NY. Co-owner Teressa Bellissimo cooked up leftover wings with some hot sauce for her son and his friends who ended up liking them so much the wings were put on the menu the very next day. Traditionally served with celery and blue cheese dressing buffalo wings eventually became a staple on all bar food menus.
How to Make Buffalo Chicken Meatballs
What I love about these meatballs is that I get all the flavor of buffalo wings without the mess and with the addition of carrots and celery a bit healthier too. To make these meatballs I mix together ground chicken, panko breadcrumbs (panko are Japanese breadcrumbs that are lighter and crispier than traditional breadcrumbs), finely shredded carrots (the small side of my box grater works perfectly for this) and finely chopped celery (easy to achieve with your kitchen knife) along with an egg, salt and pepper. Get your hands in there and mix everything up.
Since ground chicken is quite lean this mixture ends up being a bit too sticky to roll into perfectly round balls but using a spoon or a small cookie dough scooper to portion out the meatballs will certainly do the trick. After these meatballs bake up super quick (18 minutes at 400 degrees is all it takes) just toss them with your favorite buffalo sauce (I really like this healthier one and this one is widely available). Serve alongside some celery and your favorite blue cheese dip (or ranch if that’s more your speed) and get ready to dig in.

Buffalo Chicken Meatballs
Equipment
- Baking Sheet
- Silicon baking mat
Ingredients
- 1 pound ground chicken
- 1/4 cup panko breadcrumbs
- 1/4 cup finely grated carrot
- 1/4 cup finely chopped celery
- 2 large scallions, chopped
- 1 large egg
- kosher salt and black pepper, to taste
- 1/2 cup buffalo sauce
Instructions
- Preheat oven to 400 degrees. In a large bowl combine ground chicken, panko, egg, vegetables, salt and pepper until thoroughly mixed
- On a baking sheet lined with parchment paper or a silicon baking mat place meatballs using a tablespoon or cookie scoop ( these meatballs are quite sticky and will not roll into a ball very well), spacing at least an inch apart. Bake for 18 minutes.
- Place meatballs and buffalo sauce into a large bowl and toss to coat. Serve with your choice of blue cheese or ranch dressing and celery.
