Few things are better in life than a brownie. Crinkly on the top and fudgy in the middle brownies really are the perfect dessert. How about we level up our brownies with the addition of a layer of rich, creamy cheesecake? Just for fun, let’s add in a good dose of Baileys Irish Cream into both the cheesecake and brownie (Do I have your attention yet? I thought so). Chocolatey, fudgy, and spiked with Irish cream these brownies check off all the boxes. These Baileys Irish Cream Cheesecake Brownies are easy to make from scratch and are positively divine.

What is Irish Cream?
Irish cream was invented in Dublin in 1973 and is a blend of cream, sugar and Irish whiskey. Irish cream is enjoyed straight, as part of and Irish coffee or even hot chocolate. Irish cream is also a popular ingredient in desserts (like these delectable brownies ).
How to make Baileys Irish Cream Cheesecake Brownies
Making brownies from scratch is much simpler that you might expect. For my brownie batter I drew inspiration from this Ultimate Brownies recipe using the basic technique and making a few adjustments to the ratios for my personal taste (when it comes to brownies I like a rich chocolate flavor, a crinkly top and extra fudgy texture). This starts with melting butter and chocolate chips together ( I prefer a bittersweet chocolate in the 60-70% range but semisweet chocolate in the 55-60% range would work as well). In a large bowl cream together the sugar and eggs until creamy ( this helps make that desired crinkly, crackly top), then mix in the melted chocolate along with flour, salt, vanilla and Irish cream.
Now its time to make the cheesecake layer and it’s pretty simple as well. Just mix together cream cheese, sugar, an egg, vanilla flour and a second dose of Baileys.
In an 8×8 in baking pan lined with parchment paper or sprayed with cooking spray pour in about 2/3 of the brownie batter and then spread out the cheesecake layer evenly over this. Spoon out the remaining brownie batter on top of the cheesecake layer and use a butter knife to create swirls if you want a marbled pattern. Bake these brownies at 350 degrees at 40 minutes. Let these cool fully before cutting and enjoying the fudgy double Baileys goodness.

Baileys Irish Cream Cheesecake Brownies
Equipment
- Hand Mixer
- 8 x 8 in square baking pan
Ingredients
For the cheesecake
- 8 oz cream cheese softened
- 1/3 cup sugar
- 1 large egg
- 2 tbsp all purpose flour
- 2 tbsp Baileys Irish Cream
- 1/4 tsp vanilla extract
For the Brownie Batter
- 1 cup bittersweet chocolate chips
- 1/2 cup unsalted butter
- 2 large eggs plus 1 large egg yolk
- 1 cup sugar
- 1/2 tsp vanilla extract
- 1/2 cup all purpose flour
- 1/4 tsp sea salt
- 2 tbsp Bailey's Irish Cream
Instructions
- Preheat oven to 350 degrees. In a medium bowl combine cream cheese, sugar, egg, Baileys, flour, egg and vanilla extract and beat until smooth.
- In a double boiler melt chocolate and butter stirring until well mixed.
- For the brownie batter beat together sugar and eggs with an electric hand mixer using medium-high speed in a large bowl until smooth and creamy, about 3 minutes. Mix in melted chocolate, vanilla, flour salt and Baileys using the electric hand mixer low speed on low speed until combined. A few lumps are fine.
- Line an 8×8 in baking pan with parchment paper or spray with cooking spray. Pour about 2/3s of the brownie mixture into the pan, smoothing it out into an even layer. Spread the cheesecake mixture over this and then top with the remaining brownie batter. You may have spots where the cheesecake layer isn't completely covered, this is fine. Use a knife to create a swirl pattern if desired.
- Bake the brownies for 40 minutes. Remove from the oven and allow to fully cool on a rack. Remove brownies from the pan and cut into 16 squares.
