What are Scones?
Scones are a type of quick bread originally from the UK. Using baking powder as a leavener (as opposed to yeast) to obtain rise the method for making scones is pretty similar to southern biscuits. Whether I’m making them for weekend breakfast or to go with a spot of afternoon tea scones are one of my favorite things to bake when the weather turns cooler. Buttery, flaky, not too sweet and easy to make scones are a regular in my fall baking line up.

How to Make Apple Scones
As far as I’m concerned there’s no better fruit to bake with than apples. Whether you’re making scones, pie, crisp, muffins or cake the addition of apple and warm fall spices is instantly cozy and comforting. As I mentioned above, the process of making scones is similar to that of American biscuits (not to be confused with British biscuits which are little crisp cookies. ). In one bowl combine together the flour, baking powder, spices and a bit of salt.
Then it’s time for the butter. Whether you’re making pie crust, biscuits or scones you want to keep your butter as cold as possible so give yourself a good start by popping your butter in the freezer for at least 10-20 minutes. This also makes your butter a lot easier to grate.
Why on Earth would I grate my butter?
Well, when you grate your butter you end up getting little pieces of butter scattered throughout your dough that result in soft, flaky scones that rival any coffeeshop .
In another bowl mix together the buttermilk and sugar (the buttermilk provides acid to react with the baking powder to ensure the scones get extra lift as tey bake ) as well as an egg and vanilla. Stir in the cubed apples.Once that’s combined add that to the flour mixture and mix together using your hands until everything is just combined ( a heavy hand will activate too much gluten resulting in a tough scone). Transfer the dough to a baking sheet topped with parchment paper or a silicon baking mat.
With floured hands form the dough into an 8 inch disk (the dough will be sticky). In a small bown bowl beat together the remaining egg with 1 tbsp of water to create an egg wash. Cut the dough into 8 wedges ( I like to use a bench scraper or knife coated in cooking spray ) and brush the tops of the scones with the egg wash to ensure the scones become golden brown and delicious.
Bake at 400 degrees for 22-25 minutes. WIll the scones are cooling prepare the glaze by mixing together the powdered sugar, maple syrup, milk and cinnamon. Drizzle the glaze over the scones and serve as desired.

Jacqueline Jaimes says
this was quite good. i had to make modifications, but i bake a lot so i figured out what to do pretty easily. the dough i made was quite sticky(maybe my apple was bigger than most? i did a small dice). i didn’t want to add more flour as i thought that may make the dough tough. no way it would be shaped according to the directions so i got out my biggest ice cream scoop and used that; i got 10 or 11. i didn’t pat them down..baked according to directions.. bake at the lower end of the time spectrum..at 22 minutes the bottoms got a bit dark but it didn’t effect the flavor. i put the glaze on while they were still hot. very good and good the next day too! usually you have to finish them the day they’re made or they get stale quickly. not these!!
Nathan says

Shan says
These look so good and I would love to try. I don’t bake as much as I would like but like to try new things. I am confused about one thing in the recipe the cream part. What kind of cream do you mean?
Brianna says
Heavy cream like you would put in your coffee, brushing a little bit on the top before baking helps give the scones a nice golden color. Please let me know how they turn out for you!
Liz says
Came out super light and fluffy. Dough was very sticky and loose. I didn’t want to add anything else and just wanted to see what happened with the bake.
I was able to score the dough prior to baking, but the dough was so soft and loose, it became one giant disc. It was easy enough to cut after baking.
I added a little flaked sea salt on the finished, glazed scones for crunch and a salt/sweet foil.
I will try the recipe again one day to see if I missed something- overall taste was awesome, it just didn’t come together as a dough that held its shape at all.
Brianna says
It is a sticker dough in general. On more humid days I do find that I need to add more flour sometimes but I’m glad you liked it!
Katie Crenshaw says
These are so flavorful and delicious. The chunks of diced apple and the maple cinnamon glaze makes these over the top! Bake these for breakfast or entertaining. Either way, anyone that eats one will be in for a special treat.

I’m stumbling upon this recipe in the midst of a rather hot week for Swedish standards, but I don’t care. Nights get cold enough here and one of the reasons why I moved to Sweden is because winters are long. I’m a lover of all things warming and spice so despite the weather being on the warm side I will be soon enjoying these scones because as you say apples are just the perfect fruit to bake with. Anytime!
Silvia says

I’ve always thought that scones were a bit overrated. I thought they were just a crumbly biscuit with not too much taste. Was I wrong!! These apple scones made me think of cool Fall nights with the air filled with spices. And the Maple glaze finished them off perfectly. I served them to my bookclub. I didn’t have any left (I made a double batch) and I couldn’t get them to stop talking about them and discussing the book instead.

Yum, perfect for the fall season!
Anna says
This dough wasn’t sticky, it was just super super wet. I had to add extra flour and it was STILL super wet. I would have added more but decided to not try to edit the recipe too much since it did have good reviews, but it’s out of the oven now and these do not look at all like scones! And I’ve made plenty of scones (American and UK types) so this wasn’t user error in mixing the flour/butter mixture.
I have no doubt that they will taste amazing especially with the glaze, but heads up to others who are expecting Starbucks style scones….these are not that.
Brianna says
Hi Anna, thanks for trying my recipe and I’m sorry the dough gave you trouble. I’m curious as to what might have happened with your batch, any chance it was a rainy or humid day? I’ve had that alter my baked goods making them require more flour.
K says
Excellent recipe! It was our first time making scones and I took them into work for a team meeting. The general consensus was that they were the best scones they’d ever had.
Do you think the base recipe could be used with blueberries? I was tempted to try blueberry with lemon glaze.
Brianna says
I’m thrilled you liked them! I definitely think the base scone recipe would work great with blueberries and lemon glaze. Let me know hot they go!
Sunita says
This is by far the best scone ever!! This scone is truly
Over the top Special.. Bet you can’t eat just one 😋
Thank you sooo much
Brianna says
I’m so happy you liked these scones!
M says
This is not a scone. It’s a scone shaped piece of cake. I should have known when it called for an egg. The texture is NOT scone-like. Now, the flavor is good, as they say on GBBO, but it’s not a scone.
Brianna says
There are multiple scone recipes, both in the UK and abroad that contain eggs. I’m glad you enjoyed the flavor.
Jennifer says
Ten out of ten!!!! These are my new favorite scone. I added 1/2tablespoon to my whole milk because I didn’t have buttermilk but aside from that I followed the direction exactly, loved the tip of spraying oil on my knife before cutting. Also, love the reminder to not overwork the dough when mixing the butter in. These were absolutely perfect. The apples get just the right amount of soft, they’re not too dense or to sweet. Seriously can taste every single flavor, just the right amount of everything. (The kids especially like the glaze) Thank you! Can’t wait to make these for my in/laws this thanksgiving 🙂
Brianna says
Your comment absolutely made my day 🙂
Maria says
Love this recipe! It was easy, quick, and turned out perfectly.
Lena says
These sound so good! Can I freeze the dough?
Brianna says
I’ve never frozen them myself but according to King Arthur you can freeze scone dough after you’ve shaped them.
Renée says
A.MAZ.ING! This is by far the best apple scone recipe I’ve made! I 100% agree that the butter should be frozen and grated. It makes all the difference in the world! I made a few alterations/subs ~ First I always like to saute my diced apples coated in a cinnamon/sugar mix in a pat of butter to soften them up a tiny bit, then I substituted Pumpkin Pie Spice for the nutmeg because I ran out of plain nutmeg and I only had 1/2 & 1/2 so substituted the buttermilk for that. I also put the dough in the freezer for 10 mins before slicing them to bake.
Crunchy on the outside but moist and oh so delicious on the inside, just like a scone should be!
Thank you for sharing!
Brianna says
Renee, I’m absolutely thrilled you liked my scones so much! Your comment just made my day 🙂
Marian Brawley says
Very mild apple flavor, glaze helped. Baked up very high, cake consistency not like a denser scone. I questioned the use of a tablespoon of baking powder since I didn’t recall ever using that much in any recipe but went with it anyway. Batter needs more flavor, and slightly chunkier apple. Definitely less baking powder. I’m thinking the use of lower case t should’ve been tsp.
Bonnay says
I am looking forward to making your recipe but 1 question why do you say divide eggs? I cannot see where you us them that way in the instructions
Brianna Simmons says
Hi Bonnay, 1 egg is is used for the dough and 1 other is used to make an egg wash to brush the top of the dough. Please let me know how you like these scones 🙂
Don says
Substituted the buttermilk with eggnog. Great tasting scone
Brianna Simmons says
That sounds delicious, I’ll have to try the eggnog!
Linda says
Ok -probably silly question. Do you separate the scone wedges before baking them or do you leave in the circle to bake?
Brianna Simmons says
I’ve done both, it’s really personal preference. I live in a humid area and sometimes the dough can be too sticky to separate.
Dacha says
Made them exactly as directed. Very good and moist. Next time (personal preference) I’ll add a bit more cinnamon and use half the nutmeg.
Brianna Simmons says
I’m glad you liked them! I think a dash of cardomom would also be lovely
