When it comes to cooking breakfast for a crowd you can’t go wrong with an overnight French toast. With all of the prep work done the night before all you need to do is pop this in the oven for a delicious start to your day. Cinnamon scented apples cooked in a buttery homemade caramel make this baked French toast extra decadent. My Caramel Apple French Toast Casserole is easy to make and perfect for any weekend breakfast.

French toast is one of my favorite breakfast indulgences (take a look at my Orange Pecan French Toast and Make Ahead Strawberry Cream Cheese French Toast) and this version may just be my best one yet. It starts with cinnamon apples that are cooked until soft and fragrant in a simple homemade caramel sauce (and this recipe makes extra caramel sauce to drizzle on top of the French toast when you serve it). The apples are then layered with bread (I recommend brioche or challah) and an easy custard made with apple cider to double up on the apple flavor. The result is a breakfast that tastes like apple pie ( and who doesn’t want to start their day with that?).

- salted butter
- brown sugar
- ground cinnamon

- challah or brioche bread
- milk
- apple cider
- large eggs
- vanilla extract
How to Make Caramel Apple French Toast Casserole
Well start the french toast by preparing the caramelized apples. Melt butter in a large skillet over medium high heat. Stir inthe brown sugar and 1 tsp cinnamon until fully combined. Add in the sliced apples and cook for 10 minutes or until the apples have softened.Transfer the apples to the bottom of a 9×13 inch baking dish (Reserving remaining caramel sauce to serve with the finished french toast) and then layer the sliced bread over the apples.
In a large mixing bowl whisk together the milk, apple cider, eggs, remaining 1 tsp cinnamon and vanilla extract. Pour the milk mixture evenly over the bread ensuring the bread is evenly covered. Cover and refrigerate at least 2 hours or up to overnight.
Preheat the oven to 350 degrees and remove the French toast from the refrigerator and allow to sit at room temperature for 15 minutes. Transfer the dish to the oven and bake for 40 minutes or until the top of the French toast has turned golden. Allow the French toast to cool for 5 minutes before serving. Heat the reserved caramel in the microwave for 30 seconds and drizzle over the French toast.

- 1/2 cup salted butter
- 1 1/4 cup brown sugar
- 2 tsp ground cinnamon divided
- 4 apples peeled and sliced
- 1 16 oz loaf challah or brioche bread cut into 12 slices
- 3/4 cup milk
- 3/4 cup apple cider
- 3 large eggs
- 1 tsp vanilla extract
Instructions
- Melt butter in a large skillet over medium high heat. Stir inthe brown sugar and 1 tsp cinnamon until fully combined. Add in the sliced apples and cook for 10 minutes or until the apples have softened.
