If you’re looking for a crowd pleasing appetizer that’s easy to make then my friends, this smoky beer cheese dip is for you. Perfect for game day get togethers, Octoberfest celebrations, holiday parties or to liven up a random Tuesday night this smoky beer cheese dip comes together in minutes and will quickly become one of your favorite recipes. Gooey, smoky, melty and cheesy this smoky beer cheese is an appetizer everyone is sure to love.

Smoky Beer Cheese Dip

When I’m out at my favorite local brewpub you can bet money on me getting the beer cheese appetizer. I’m definitely a turophile (the fancy word for cheese lover, feel free to use that for your next Scrabble game ) and I have yet to meet a cheese I didn’t like.

Smoky Beer Cheese Dip

When it came to creating a beer cheese recipe for home I wanted to bring in as much flavor as possible. Cheddar is the classic cheese used for beer cheese dip and I always have some in my fridge so of course it had a home in this recipe, but to really amp up the flavor I added in an equal amount of smoked gouda. Creamy smoked gouda is a great cheese to use when making beer cheese dip. I also doubled down on the smokiness with the addition of smoked paprika.

What is the Best Beer to Use in Beer Cheese Dip

Smoky Beer Cheese Dip

Aside from fruity or experimental dessert type beers you can really use whatever beer you’d like. Lighter ales and wheat beers will bring a mellow flavor while porters and stouts will have a richer taste. I like to use an amber ale or traditional German lager.

To make this cheese sauce I start by making a roux, a combination of melted butter and flour that will give this dip it’s thick consistency. I then whisk in the milk until it’s smooth and stir in the beer and other seasonings. The final step is adding in the cheese and stirring until its fully combined. Transfer the smoky beer cheese dip to a serving bowl, and if you’re like me try not to eat it all before bringing it to the appetizer table.

Equipment

  • medium saucepan

Ingredients
  

  • 3 tbsp unsalted butter
  • 3 tbsp flour
  • 1 cup milk
  • 1/2 cup beer
  • 2 tsp Worcestershire sauce
  • 1 tsp dijon mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp smoke paprika
  • 1/4 tsp salt
  • 1 cup smoked gouda cheese freshly grated
  • 1 cup cheddar cheese freshly grated

Instructions
 

  • In a medium saucepan melt the butter over medium high heat and whisk in flour until it forms a smooth paste, about 1-2 minutes.
  • Slowly add in milk while whisking continuously until thick, about 1 minute.
  • Stir in beer and seasonings, Add cheeses and stir until fully melted and combined.
  • Remove from heat and pour into a serving dish. The cheese will thicken slightly as it cools.

Notes

  1. You can use all cheddar cheese if you can’t find smoked gouda and this will still be delicious.
  2. Store the cheese dip in the refrigerator for up to a week, reheat before serving.
