This black bean salad is highly versatile. It take less then 10 minutes to make, is healthy and is a great make ahead dish. If you want to amp up this salad you can add shredded chicken, grilled steak or shrimp.

- Black beans
- Cherry Tomatoes
- Corn
- Avocado
- Cilantro
- Lime juice
- Lime zest
- Olive oil
- Ground cumin
- Kosher salt
- Black pepper
How to Make Black Bean Salad with Avocado
This is less a recipe and more of a template. Not a cilantro fan? No problem! Cubed sweet potato, bell pepper or cheese would all be great additions as well; feel free to make this black bean salad your own.
To make the dressing whisk together lime juice, zest, olive oil, cumin, salt and pepper until combined. Set aside. In a large bowl add the black beans, tomatoes, corn, avocado and cilantro. Drizzle the dressing over the salad and toss to combine. Serve immediately or refrigerate to allow the flavors to meld.

For the dressing
- 1 large lime, zest and juice
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1/2 tsp kosher salt
- 1/2 tsp ground black pepper
For the salad
- 2 15 oz cans black beans drained and rinsed
- 10 oz grape or cherry tomatoes halved
- 1 cup corn kernels
- 1 large avocado diced
- 1/4 cup fresh cilantro chopped
Instructions
- For the dressing
- To make the dressing whisk together lime juice, zest, olive oil, cumin, salt and pepper until combined. Set aside.
To Make the Salad
- In a large bowl add the black beans, tomatoes, corn, avocado and cilantro. Drizzle the dressing over the salad and toss to combine. Serve immediately or refrigerate to allow the flavors to meld.
