Ingredients
  

For the dressing

  • 1 large lime, zest and juice
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper

For the salad

  • 2 15 oz cans black beans drained and rinsed
  • 10 oz grape or cherry tomatoes halved
  • 1 cup corn kernels
  • 1 large avocado diced
  • 1/4 cup fresh cilantro chopped

Instructions
 

  • For the dressing
  • To make the dressing whisk together lime juice, zest, olive oil, cumin, salt and pepper until combined. Set aside.

To Make the Salad

  • In a large bowl add the black beans, tomatoes, corn, avocado and cilantro. Drizzle the dressing over the salad and toss to combine. Serve immediately or refrigerate to allow the flavors to meld.
