Carrot Mint Salad with Honey Lime Dressing

In my opinion carrots are one of the most underrated veggies. Too often carrots are relegated to the lunch box or dip tray but with just a little bit of love carrots can be spectacular. This carrot mint salad is easy to make and and easy to make ahead making a perfect side dish for summer.

I came up with the recipe for this carrot mint salad when I was looking for what to serve with lamb burgers.I wanted something light since it was warm out and a bunch of carrots sitting in my crisper. I also had a bunch of mint from my friend’s garden that would go perfectly with the Mediterranean flavors of those lamb burgers.ย 

Carrot Mint Salad with Honey Lime Dressing


Shredded carrots and mint alone do not make a salad – I needed a dressing. I’ve been on a lime kick recently and put in a double dose using the juice and zest. Add in a bit of honey for some sweetness,  a dash of cumin for some smokiness and whisk in some olive oil to bring it all together and we’ve got a dressing that will brighten just about anything.

While simple this carrot mint salad is far more than just the sum of its ingredients. Crunchy, bright, smoky, sweet; this carrot mint salads hits all the right notes and belies just how easy this is to bring together. This salad is perfect with everything from burgers and grilled fish to falafel and salads. I personally think this carrot mint salad lends itself as a perfect accompaniment to Greek, Israeli and Persian dishes. You can eat this salad right away but I think it tastes even better after letting the flavors mingle for a few hours.

Carrot Mint Salad with Honey Lime Dressing

Fresh, light, smokey and sweet; this Carrot Mint Salad with Honey Lime Dressing is an easy family-friendly side dish. This salad is vegan, gluten-free and comes together in just minutes.

Ingredients
  

  • 1 pound carrots
  • 1/4 cup fresh mint sliced

For the Honey Lime Dressing

  • 1 tbsp honey
  • 1 tsp lime zest
  • 1 tbsp lime juice
  • 1/2 tsp cumin
  • 1/4 tsp each salt and pepper
  • 1 tbsp olive oil

Instructions
 

  • Whisk together the honey, zest, lime juice, cumin, salt and pepper in a medium bowl. Slowly add in olive oil while continuing to whisk until the dressing is combined.
  • Grate the carrots using a box grater or shredding blade of a food processor. Add the carrots and mint to the dressing and toss to combine.

Notes

You can serve this carrot mint salad immediately but I think it tastes better if it’s allowed to rest for a few hours. Either way it’s tasty.
