Roasted Carrots with Honey and Thyme

Far too often carrots are relegated to the snack tray, maybe to be dipped in some hummus or ranch. Personally, I think that’s a shame. With a few basic ingredients and a little bit of love carrots can be elevated to an easy and sophisticated side dish that everyone, from the pickiest toddler to the most discerning gourmand, will love. My recipe for Roasted Carrots with Honey and Thyme is easy to make and perfect for busy weeknights and Sunday supper.

If you’re like me your vegetable side dishes tend to be on the simple side but that doesn’t mean they have to be boring. Six ingredients and some time in the oven with high heat transforms the humble carrot into a side dish worthy of your favorite fancy steakhouse. These roasted carrots are the perfect side dish for steak, roasted chicken, pork tenderloin or salmon.

These carrots couldn’t be easier to make. After preheating the oven I take a few minutes to peel the carrots and slice them ( I prefer slicing them lengthwise but you can certainly slice them into chunks if you wish). I like to warm the honey a bit (10-20 seconds in the microwave will do the trick) so it mixes more easily with the olive oil, thyme, salt and pepper. Brush this all over the carrots and pop them in the oven for 20-25 minutes.

The result is carrots that are slightly crispy on the outside, and tender on the inside. The heat intensifies the natural sweetness of the carrots and honey while the herbal notes from the thyme take these carrots to the next level.

  • Baking Sheet

Ingredients
  

  • 2 pounds carrots peeled and sliced
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 1 tbsp fresh thyme
  • 1/4 tsp salt or to taste
  • 1/4 tsp black pepper or to taste

Instructions
 

  • Preheat oven to 400 degrees F.
  • In a small microwave safe bowl microwave the honey for 10-20 seconds. Whisk together with olive oil, thyme, salt and pepper.
  • Place carrots on the baking sheet and brush with honey mixture on all sides.
  • Bake at 400 degrees for 20-25 minutes.

    I love roasted carrots. Never thought of adding honey to them because I usually roast them to bring out the sweetness in them through caramelisation. This looks like a fun short cut for less cooking time and I love thyme. Period.
