This banana bread recipe features one of my favorite flavor combinations. A mix of ripe bananas, peanut butter and brown sugar provide the right balance of sweetness while Greek yogurt keeps the texture soft, moist and fluffy.

Ingredients

  • All purpose flour
  • Baking Powder
  • Kosher salt
  • Large bananas
  • Brown sugar
  • Peanut butter
  • Greek yogurt (or sour cream)
  • Unsalted butter
  • Large eggs
  • Vanilla extract

Baking Tips

  • While I typically use creamy peanut butter you can certainly use crunchy if you’d like crunchy bits of peanuts throughout your banana bread.
  • I always use natural peanut butter since that’s what I have on hand but feel free to use your favorite brand. If you use it just make sure you fully stir it before using.
  • For the best banana flavor make sure to use overripe bananas. Bananas with brown spots on the peels are softer and sweet and make the best banana bread.
  • You can substitute sour cream for the Greek yogurt if you’d like. Both ingredients give this banana bread moisture and a soft texture.
  • Stir in 1/2 cup of chocolate chips into the batter for a sweet twist on this pb banana bread.
  • In the mood for muffins? You can divide the batter into a prepared 12-cup muffin tin and bake at 325 degrees for 25 minutes.

How to Make Peanut Butter Banana Bread

This banana bread is very simple to make and comes together in a snap. Start by preheating your oven to 325 degrees, then prepare a loaf pan with cooking spray and line with parchment paper.

In a mixing bowl whisk together flour, baking soda and salt.In a separate bowl whisk together mashed bananas, brown sugar, Greek yogurt, peanut butter, eggs, melted butter and vanilla. Stir in the dry ingredients  with the wet ingredients until everything is just combined. Transfer the batter to the prepared loaf pan. Using a butter knife create a shallow line down the middle of the batter lengthwise leaving a 1 inch space on either end.

Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean. Let the bread cool for at least 10 minutes on a wire rack before removing the banana bread from the pan and slicing. Serve as desired.

Storage

  • Store leftover banana bread wrapped in aluminum foil for 3 days at room temperature or up to 5 days in the refrigerator.
  • To freeze the whole loaf by wrap it in a layer of plastic wrap followed by a layer of heavy-duty foil or a freezer safe zip top storage bag. Store in the freezer for up to 2 months. Thaw at room temperature before serving.

Ingredients
  

  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 2 large bananas, mashed approximately 1 cup mashed
  • 2/3 cup brown sugar
  • 1/2 cup peanut butter
  • 1/2 cup Greek yogurt
  • 1/3 cup unsalted butter melted
  • 2 large egg
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 325 degrees and prepare a loaf pan with cooking spray then line with parchment paper.
  • In a mixing bowl whisk together flour, baking soda and salt.
