Snickerdoodle Cookie Bars

Equipment

Ingredients
  

  • 2 ¼ cups all purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • teaspoons vanilla extract

For the topping

  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Instructions
 

  • Preheat the oven to 350 degrees F and prepare an 8 inch square baking pan by spraying it with cooking spray and lining with parchment paper.
  • In a large mixing bowl whisk together the all purpose flour, cinnamon, cream of tartar, salt, baking powder and baking soda.
  • In a separate bowl beat together the butter, granuated sugar and brown sugar on medium speed until creamy (about 1-2 minutes). Add in the eggs and vanilla and beat on medium speed until combined.
  • Add the dry ingredients to the butter mixture and beat on medium-low speed until just combined.
  • Transfer the the dough to the prepared baking pan and pat flat with your hands or a silicon spatula.
  • For the topping stir together the granulated sugar and cinnamon and the sprinkle liberally over the snickerdoodle dough.
  • Bake at 350 degrees F for 20-23 minutes, or until the top is set and edges are slightly golden.
  • Cool completely on a wire rack. Transfer the bars to a cutting board and slice into 16 pieces. Serve as desired.
