Turn classic snickerdoodles into easy cookie bars! These soft, chewy bars are filled with buttery cinnamon-sugar flavor and make a delicious dessert for holidays, parties and everyday baking.
Preheat the oven to 350 degrees F and prepare an 8 inch square baking pan by spraying it with cooking spray and lining with parchment paper.
In a large mixing bowl whisk together the all purpose flour, cinnamon, cream of tartar, salt, baking powder and baking soda.
In a separate bowl beat together the butter, granuated sugar and brown sugar on medium speed until creamy (about 1-2 minutes). Add in the eggs and vanilla and beat on medium speed until combined.
Add the dry ingredients to the butter mixture and beat on medium-low speed until just combined.
Transfer the the dough to the prepared baking pan and pat flat with your hands or a silicon spatula.
For the topping stir together the granulated sugar and cinnamon and the sprinkle liberally over the snickerdoodle dough.
Bake at 350 degrees F for 20-23 minutes, or until the top is set and edges are slightly golden.
Cool completely on a wire rack. Transfer the bars to a cutting board and slice into 16 pieces. Serve as desired.
