Kale and Apple Salad with Maple Dijon Vinaigrette

This kale and apple salad is a healthy and delicious salad for fall and winter. With a homemade dressing this kale and apple salad with maple dijon vinaigrette is perfect as a light lunch, as part of dinner or even as part of a holiday meal.

Ingredients
  

For the Maple Dijon Viniagrette

  • 2 tbsp apple cider vinegar
  • 2 tbsp maple syrup
  • 1 tbsp dijon mustard
  • 1/4 cup olive oil
  • 1/4 tsp kosher salt
  • 1/4 tsp ground black pepper

For the Kale and Apple Salad

  • 4 cups kale curly or lacinato kale
  • 1 medium apple sliced
  • 1/2 cup walnuts
  • 2 oz goat cheese crumbled

Instructions
 

  • Add the apple cider vinegar, maple syrup, dijon mustard, salt, pepper and olive oil to a mason jar and shake well to combine. Set the dressing aside while you prepare the rest of the salad. Alternatively you can add the apple cider vinegar, maple syrup, dijon mustard, salt and pepper to a small bowl and whisk in the the olive oil until well combined.
  • Place the shredded kale in a large bowl and add in half of the dressing. Using your hands massage the kale with the dressing for at least 1-2 minutes or until the kale has softened.
  • Add in the sliced apples, walnuts and crumbled goat cheese and drizzle the remaining dressing over the salad. Serve as desired.
