Green Bean Casserole with Crispy Shallots

This green bean casserole with crispy shallots is a classic Thanksgiving side made better with tender green beans, creamy sauce and golden, crunchy shallots.

Ingredients
  

  • 2 tablespoons unsalted butter
  • 1 large shallot diced
  • 2 cloves garlic minced
  • 8 oz cremini mushrooms sliced
  • 1/3 cup all purpose flour
  • cups chicken stock
  • pounds fresh green beans trimmed
  • 1/2 cup heavy cream
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 2 cups grated white cheddar cheese divided
  • cup panko breadcrumbs

For the Crispy Shallots

  • 1/4 cup canola oil
  • 3 large shallots thinly sliced
  • 1/4 cup all purpose flour

Instructions
 

  • Preheat the oven to 340 degrees F.
  • Heat olive oil in a large skillet over medium heat, add the shallots and saute 1-2 minutes or until fragrant. Add in the garlic and sliced mushrooms and saute for 4 minutes or until the mushrooms are tender.
  • Sprinkle in the flour and cook for 1 minute while stirring. Pour in the chicken broth and stir to scrap up the browned bits at the bottom of the pan. Cook for an additional 1-2 minutes or until bubbly. Add in the green beans and stir to ensure they are coated with the mushroom sauce. Cover and cook for 5 minutes. Uncover the pan and stir in the heavy cream, 1 cup of the cheddar cheese, salt and pepper.
  • Transfer the green bean mixture to a 2 quart baking dish. Top with panko breadcrumbs and the remainder of the cheddar cheese. Transfer to to oven and bake for 20 minutes.
  • While the green beans are baking prepare the crispy shallots. Slice the shallots into thin rings and toss with the flour to coat. Heat the oil in a medium skillet over medium heat. Shake any excess flour and add half the shallots to the oil. Fry the shallots for 4 minutes or until golden and crispy. Repeat with the remaining shallots.
  • Romve the casserole from the oven and top with the crispy shallots. Return to the oven and bake for an additional 20 minutes.
  • Remove from the oven and allow to cool for at least 10 minutes. Serve as desired.
