1tsppumpkin pie spiceor 1/2 tsp ground cinnamon, 1/8 tsp each of ground nutmeg, ground cloves, ground ginger and ground allspice
3cupsold fashioned oats
1cuppecans
1/4cuppepitas
2tbspsugar
3/4tspkosher salt
Instructions
Preheat oven to 350 degrees Melt the coconut oil in a small saucepan over medium heat. Whisk in maple syrup, pumpkin puree and pumpkin pie spice.
In a large bowl add oats, pecans, pepitas, sugar,salt and stir. Drizzle pumpkin mixture over oats, stir making sure oats are thoroughly coated.
Bake for 25-30 minutes; stirring halfway through baking time or bake undisturbed if you prefer a chunkier granola. Remove the pan and let cool completely. Serve as desired.
