Cranberry Whipped Feta Dip

Ingredients
  

  • 2 cups fresh cranberries
  • 3/4 cup fresh orange juice
  • 1/4 cup honey
  • 8 oz block feta in brine, drained
  • 3/4 cup Greek yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon fresh orange zest
  • 1/4 cup chopped pistachios

Instructions
 

  • For the cranberry topping add the cranberries, honey and orange juice to a medium saucepan and bring to a boil over medium heat. Reduce to a simmer and cook for 10 minutes until cranberries have popped, stirring occasionally. Allow to cool while you prepare the whipped feta.
  • Into the bowl of your food processor add in the feta cheese (in large crumbles) Greek yogurt, and orange zest. Blend this while drizzling in the olive oil through the top opening. Continue to blend until smooth and creamy, about 1-2 minutes.
  • Transfer the whipped feta to a serving dish and spoon the cranberry sauce over the feta. Top with chopped pistachios and serve as desired.
