One Pot French Onion Pasta

Ingredients
  

  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 large onions halved and sliced
  • 8 oz cremini mushrooms, sliced
  • 3-4 cloves garlic minced
  • 1 tbsp fresh thyme
  • 1 tsp kosher salt, divided
  • , 1 tsp ground black pepper, divided
  • 1/4 cup sherry or dry white wine
  • 1 tbsp Worcestershire sauce
  • 4 cups beef broth
  • 12 oz rigatoni pasta
  • 1/4 cup heavy cream
  • 1 cup gruyere cheese, shredded

Instructions
 

  • Heat the olive oil and butter in a large dutch oven over medium heat until the butter has melted. Add in the sliced onions and stir to ensure the onions are well coated. Cook the onions for 30 minutes, stirring every 3-4 minutes, until the onions are golden brown.
  • Add in the sliced mushrooms, garlic and thyme and saute for 3-4 minutes. Pour in the sherry or wine, worcestershire sauce, and 1/2 tsp each of the salt and pepper and cook for an 1-2 minutes while scraping up the browned bits from the bottom of the pan with a wooden spoon.
  • Add the beef broth and pasta into the pot and bring to a boil. Cook for 12 minutes or until the pasta is al dente. Stir in the the cream and gruyere cheese until the cheese is melted and fully incorporated and the sauce is creamy. Divide among four bowls and serve as desired.
