1 tbsp olive oil 2-3 cloves garlic minced 1 cup orzo 2 cups chicken broth 1/2 tsp salt 1/2 tsp ground black pepper 1 8 oz package of fresh mozzarella balls (ciliegine) 3 cups cherry or grape tomatoes halved 1 pound shrimp peeled and deveined 1/4 cup fresh basil torn or sliced
1. Heat olive oil in a large skillet over medium heat. Add garlic and cook for 1 minute. Add orzo and cook for 3-4 minutes until slightly toasted.
Add chicken broth, salt and pepper and bring to a simmer. Cook for 10-15 minutes until 3/4 of the liquid is absorbed.
Add tomatoes, mozzarella and shrimp. Cook for an additional 4-5 minutes. Top with fresh basil.
