Ingredients
  

  • 1 tbsp olive oil
  • 2-3 cloves garlic minced
  • 1 cup orzo
  • 2 cups chicken broth
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 8 oz package of fresh mozzarella balls (ciliegine)
  • 3 cups cherry or grape tomatoes halved
  • 1 pound shrimp peeled and deveined
  • 1/4 cup fresh basil torn or sliced

Instructions
 

  • 1. Heat olive oil in a large skillet over medium heat. Add garlic and cook for 1 minute. Add orzo and cook for 3-4 minutes until slightly toasted.
  • Add chicken broth, salt and pepper and bring to a simmer. Cook for 10-15 minutes until 3/4 of the liquid is absorbed.
  • Add tomatoes, mozzarella and shrimp. Cook for an additional 4-5 minutes. Top with fresh basil.
