Ingredients
  

  • 6 large peaches sliced
  • 2 tbsp white sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla extract

For the Pecan Streusel

  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup pecans chopped
  • 1/2 cup all purpose flour
  • 1 tsp cinnamon
  • 1/2 tsp kosher salt
  • 1/2 cup unsalted butter softened and cubed

Instructions
 

  • Preheat your oven to 400 degrees F.
  • Toss the peaches with white sugar and set aside for 10 minutes to allow the peaches to release some of their juice.
  • Add the cornstarch, lemon juice and vanilla to the peaches and stir to combine. Transfer to a 2 quart baking dish.
  • While the peaches are macerating prepare the streusel. Add oats, brown sugar, flour, pecans, cinnamon and salt to a bowl and stir combine. Add the softened cubed butter and mix in with a pastry blender, knife or your hands until the streusel has a crumbly texture.
  • Sprinkle streusel over the peaches. Transfer the crisp to the oven and bake for 30-35 minutes, or until the filling is bubbly and the streusel is golden.
  • Remove from the oven and allow to cool at least 15 minutes before serving.
