Toss the peaches with white sugar and set aside for 10 minutes to allow the peaches to release some of their juice.
Add the cornstarch, lemon juice and vanilla to the peaches and stir to combine. Transfer to a 2 quart baking dish.
While the peaches are macerating prepare the streusel. Add oats, brown sugar, flour, pecans, cinnamon and salt to a bowl and stir combine. Add the softened cubed butter and mix in with a pastry blender, knife or your hands until the streusel has a crumbly texture.
Sprinkle streusel over the peaches. Transfer the crisp to the oven and bake for 30-35 minutes, or until the filling is bubbly and the streusel is golden.
