  • 1 large cast iron skillet

Ingredients
  

  • 4 bone-in, skin-on chicken thighs about 1.5 pounds
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 8 oz mushrooms sliced
  • 3/4 cup dry white wine
  • 1 tbsp dijon mustard
  • 2 sprigs fresh thyme
  • kosher salt to taste
  • black pepper to taste

Instructions
 

  • Preheat oven to 400 degrees and heat a large cast iron pan over medium heat.
  • Pat chicken thighs completely dry and sprinkle with kosher salt. Add chicken, skin side down, to skillet and sear for 5-6 minutes or until skin is golden. Remove the chicken thighs from the pan and set aside.
  • Add olive oil to the pan and saute garlic and mushrooms for 3-4 minutes. Add white wine, dijon, salt and pepper and stir to combine. Add in thyme and chicken thighs (skin side up) to the pan.
  • Transfer the pan to the oven and roast for 20 minutes. Remove the skillet from the oven and serve as desired.
