Melt butter in a large skillet over medium heat and stir in brown sugar until combined. Add sliced banana and cook for 4 minutes, gently flip and cook for an additional 2 minutes. Remove bananas from the heat and set aside while you prepare the batter.
Prepare the banana bread
Preheat oven to 325 degrees.
Prepare a loaf pan with cooking spray and line with parchment paper.
In a medium bowl whisk together flour, baking soda and salt.
In a large bowl whisk together mashed bananas, brown sugar, Greek yogurt, eggs, melted butter and vanilla. Stir in flour mixture until just combined.
Add 1/3 of the batter to the prepared loaf and layer with on 1/3 of the caramelized bananas. Repeat layering the remaining batter and bananas in thirds.
Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean. Cool for at least 10 minutes before removing the banana bread from the pan and slicing.
