Ingredients
  

  • 3 tbsp olive oil divided
  • 1 head cauliflower, cut into florets about 5-6 cups
  • 1 large onion, diced
  • 1 large carrot, diced
  • 3 cloves garlic, minced
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 tsp ground ginger
  • 1 tsp ground tumeric
  • 1 tsp smoked paprika
  • 1/2 tsp red pepper flakes
  • 4 cups vegetable or chicken broth
  • 1 15 oz can chickpeas, drained
  • 1 tbsp lemon juice
  • 1 tsp kosher salt
  • 1/2 tsp ground black pepper

Instructions
 

  • Preheat oven to 450 degrees.
  • Toss cauliflower florets with 2 tbsp of olive oil and spread in a single layer on a baking sheet. Bake for 30 minutes or until tender and lightly charred.
  • While the cauliflower is roasting heat remaining 1 tbsp of olive oil in a dutch oven over medium heat. Saute onions, garlic and carrots for 4 minutes or until and translucent. Stir in cumin, coriander, ginger, tumeric, smoked paprika and red pepper flakes and cook for 1 minute.
  • Add broth and chickpeas and bring to a boil, reduce heat and simmer for 10 minutes. Remove from heat and add in roasted cauliflower, salt and pepper.
  • Use an immersion blender to puree soup until smooth, (Or you can puree the soup in a traditional blender in 2-3 batches, taking care when working with the hot liquid). Serve as desired.
