1cupunsalted butter, chilled and cubedplus more(melted) for brushing
3cupsall purpose flour, plus more for dusting
2 1/2tspbaking powder
2tspkosher salt
1/4tspbaking soda
1cupbuttermilk
1cupgrated cheddar cheese
2-3jalapeno peppers, seeded and chopped plus more for garnish
Instructions
Preheat the oven to 400 degrees.
Cut butter into 1/2 inch cubes and place in the freezer for 10 minutes.
Add flour, baking powder, salt and baking soda to a food processor and pulse to combine. Add chilled butter and pulse until pea sized clumps form. Transfer mixture to a large bowl.
Transfer mixture to a large bowl. Add cheddar and chopped jalapeno and stir to combine. Drizzle the buttermilk in while tossing with a fork to combine. Gently knead a few times until a shaggy dough forms.
Turn the dough out onto a clean surface and and pat into a 1" thick square. Cut the dough into 4 equal pieces and stack the layers. Transfer to a floured surface and press the layers down with your hand. Roll out into a 1" thick rectangle and cut into 12 equal sized squares. Transfer the biscuits to the freezer for 10 minutes.
Remove the biscuits from the freezer and brush with melted butter, top with additional sliced jalapeno if desired. Placed the biscuits in the oven and bake for 20-25 minutes or until golden brown. Allow to rest for 5 minutes before serving.
