Ingredients
  

  • 1 cup unsalted butter, chilled and cubed plus more(melted) for brushing
  • 3 cups all purpose flour, plus more for dusting
  • 2 1/2 tsp baking powder
  • 2 tsp kosher salt
  • 1/4 tsp baking soda
  • 1 cup buttermilk
  • 1 cup grated cheddar cheese
  • 2-3 jalapeno peppers, seeded and chopped plus more for garnish

Instructions
 

  • Preheat the oven to 400 degrees.
  • Cut butter into 1/2 inch cubes and place in the freezer for 10 minutes.
  • Add flour, baking powder, salt and baking soda to a food processor and pulse to combine. Add chilled butter and pulse until pea sized clumps form. Transfer mixture to a large bowl.
  • Transfer mixture to a large bowl. Add cheddar and chopped jalapeno and stir to combine. Drizzle the buttermilk in while tossing with a fork to combine. Gently knead a few times until a shaggy dough forms.
  • Turn the dough out onto a clean surface and and pat into a 1" thick square. Cut the dough into 4 equal pieces and stack the layers. Transfer to a floured surface and press the layers down with your hand. Roll out into a 1" thick rectangle and cut into 12 equal sized squares. Transfer the biscuits to the freezer for 10 minutes.
  • Remove the biscuits from the freezer and brush with melted butter, top with additional sliced jalapeno if desired. Placed the biscuits in the oven and bake for 20-25 minutes or until golden brown. Allow to rest for 5 minutes before serving.
