Ingredients
  

For the apples

  • 3 large apples peeled and sliced
  • 1/4 cup white sugar
  • 1 tsp ground cinnamon

For the cake

  • 3 cups all purpose flour
  • 2 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp kosher salt
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 cup vegetable or canola oil
  • 1 tsp vanilla extract
  • 4 large eggs
  • 1/2 cup apple cider
  • 1 cup walnuts

Instructions
 

  • Preheat oven to 350 degrees F. Grease a 9 inch springform pan with oil or cooking spray.
  • In a medium bowl combine apples, cinnamon and sugar. Toss to combine and set aside.
  • In a large bowl add flour, baking powder, cinnamon and salt. Whisk to combine.
  • In a separate large bowl whisk together white and brown sugars, oil, vanilla, eggs and apple cider.
  • Add the wet ingredients to the flour mixture and fold in using a silicon or rubber spatula until just combined. Stir in the walnuts.
  • Pour half of the batter into the prepared springform pan and layer in half of the apples. Add in remaining batter and arrange the other half of the apples on top.
  • Bake for 1 hour and 10 minutes, or until a tester inserted into the center of the cake comes out clean.
  • Cool cake in the pan for 15 minutes. Run a knife along the outer edge of the cake and remove from the springform pan.
  • Serve as desired. This cake is great served warm or at room temperature. You could drizzle with honey or caramel, or top with whipped cream or ice cream.
