- 1 tbsp olive oil
- 2 cloves garlic minced
- 1 8 oz package of mushrooms sliced
- 1 large buch kale (preferably lacinato) stems removed and coarsely chopped
- 1/2 cup chicken or vegetable stock
- 1/2 tsp kosher salt
- 1/2 tsp ground black pepper
- 1 tbsp lemon juice juice from 1/2 a lemon
Heat olive oil in a large skillet over medium heat. Add garlic and mushrooms to the pan and saute for 4 minutes or until mushrooms are tender.
Add kale, broth, salt and pepper to the skillet. Cover and cook for five minutes, stirring once or twice.
Remove pan from heat and drizzle in lemon juice. Serve as desired.
