1 tbsp olive oil 2 leeks white parts sliced and cleaned 8 oz Portobello mushrooms sliced 1 tsp dried thyme or 2 tsp fresh 1 pound chicken breast cut into bite sized pieces 1.5 cups long grain rice 3 cups chicken broth 1 tsp salt pepper to taste
Heat olive oil in a large skillet over medium heat.
Add sliced leeks and mushrooms and cook for 3-4 minutes.
Add the thyme, chicken, rice, chicken broth, salt and pepper. Cover and cook until all the liquid is absorbed and rice is cooked, about 15-20 minutes.
This dish is delicious on it's own or topped with grated Parmesan cheese.
If using brown rice your cook time will be longer, about 40 minutes.
