Ingredients
  

  • 2 1/4 cup all purpose flour
  • 1/2 cup cocoa powder
  • 1/3 cup sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp kosher salt
  • 2 large eggs, separated
  • 2 cups milk
  • 1/2 cup vegetable or canola oil
  • 1 tsp vanilla extract

Instructions
 

  • Preheat your waffle iron per manufacturer's instructions.
  • You will need 3 bowls, 1 large and 2 medium. In the largest bowl combine flour, cocoa powder, sugar, baking powder, baking soda, cinnamon and salt and whisk to combine. In one of the medium bowls whisk together milk, egg yolks, vegetable oil and vanilla extract; in the other bowl beat the egg whites with an electric mixer into stiff peaks.
  • Add the milk mixture to the flour mixture and stir to combine (there may be a few lumps, which is fine). Fold in the egg white mixture.
  • Brush the waffle iron with butter and add the batter using 1/3 cup (or more depending on your waffle iron) and cook per manufacturer's instructions. Serve with fresh whipped cream, berries, chocolate syrup or whatever toppings you wish.

Notes

These waffles can be frozen in a ziptop freezer bag for up to 3 months. Yo can reheat them in a toaster or in an oven for 10 minutes and 250 degrees.
