Preheat oven to 400 degrees. In a large bowl combine ground chicken, panko, egg, vegetables, salt and pepper until thoroughly mixed
On a baking sheet lined with parchment paper or a silicon baking mat place meatballs using a tablespoon or cookie scoop ( these meatballs are quite sticky and will not roll into a ball very well), spacing at least an inch apart. Bake for 18 minutes.
Place meatballs and buffalo sauce into a large bowl and toss to coat. Serve with your choice of blue cheese or ranch dressing and celery.
