Early fall is a time of transition and a cocktail that is equal parts rich and refreshing is perfect for this time of year. The complexity of amaro is lightened with bubbles from prosecco for a cocktail that’s perfect for the change of season. The Amaro Spritz is a cocktail that’s easy and unexpected.

What is amaro?
Amaro is the Italian word for “bitter” and encompasses a number of herbal liqueurs. Common amaros include Campari, Aperol, Montenegro and Averna; though my preferred amaro used in the cocktail is Amaro Nonnino.
About the spritz cocktail
Spritzes date back to the 1800’s in the Veneto region of Northern Italy which at the time was controlled by the Austro-Hungarian Empire. Soldiers found Italian wines to be a bit too strong so they lightened their drinks with a splash of water (or “spritz” in German). Aperol and limoncello spritzes are quite popular and you’ll also find other liqueurs used such as elderflower liqueur (known as a hugo spritz).
Ingredients for Amaro Spritz
- Prosecco
- Amaro
- Soda Water
How to Make Amaro Spritz
The Amaro Spritz follows the classic 3:2:1 spritz ratio; pouring 3 parts Prosecco, 2 parts amaro and 1 part soda water. For a single amaro spritz I add amaro to a glass with ice, top with Prosecco and soda water and stir to combine. You can also easily make a large batch of amaro spritzes using the same ratio (in this case 1 bottle of Prosecco, 2 cups of elderflower amaro and 1 cup soda water), this is a great cocktail to make for any fall get together.
