I scream, you scream, we all scream for ice cream! Come summer (and really all year long, if I’m being honest ) ice cream is one of my most favorite desserts. Honey ice cream with pistachios has everything I love when it comes to dessert; sweet and delicately floral from the honey with crunchy bits of pistachio this ice cream quickly became a favorite. This honey ice cream with pistachios has just a few simple ingredients but turns out absolutely divine.

This ice cream came about when I was trying to come up with a dessert for an Israeli themed dinner of lamb with pistachios, orange and mint, homemade hummus and carrot mint salad. I immediately thought of baklava, with it’s crisp phyllo layered with decadent honeyed pistachios. Baklava is a dessert that I just can’t get enough of and I always order some when I visit my favorite local Lebanese restaurant. But since it was a hot summer night I really wanted some ice cream (again, when don’t I want ice cream) and I had an epiphany…….

With that in mind I set off in search of the perfect honey ice cream recipe both nothing I found seemed to fit the bill. Some were a little too sweet, others were a little too heavy so I decided to do a bit of experimenting. I started off using the milk, cream and honey ratios from this recipe. Then for a bit of richness I added a couple egg yolks and a good dash of vanilla (because vanilla makes everything better).

Alone this honey ice cream is delightful; but add in crunchy, nutty, salty pistachios and this ice cream is spectacular. Treat yourself during the week with this honey ice cream with pistachios or impress your guests at your next dinner party, this ice cream works for every occasion.

Honey Ice Cream With Pistachios

Equipment

  • medium saucepan
  • ice cream maker

Ingredients
  

  • 1 1/3 cup milk
  • 1 1/3 cup heavy cream
  • 3/4 cup honey
  • 2 egg yolks beaten
  • 1 tsp vanilla extract
  • 1/3 cup pistachios, roasted and salted

Instructions
 

  • Freeze the bowl of your ice cream maker overnight or per manufacturer's directions.
  • Add milk, cream and honey in a saucepan and heat over medium heat until honey is dissolved and the mixture is hot. Whisk in 1/4 cup of hot milk mixture to the egg yolks and then whisk this back into the saucepan. Stir in vanilla extract and transfer to a bowl. Chill in the refrigerator for at least 2 hours.
  • Add the cream mixture to the bowl of the ice cream maker and prepare according to the manufacturer's instructions. During the last minute of churning add the pistachios. Transfer to a freezer safe container and freeze for at least 3 hours.
