We all need a few easy vegetable side dish recipes in our back pocket, and even better if it happens to be healthy as well as delicious. Kale is a nutritional powerhouse, cooks quickly and with a little love can become one of your favorite vegetables. My Sautéed Kale and Mushrooms comes together in minutes for a side dish that’s equal parts elevated and simple.

A Little Bit About Kale

Sauteed Kale and Mushrooms

Kale is part of the brassica family that includes broccoli, cauliflower, cabbage and Brussels sprouts. A great source of calcium, iron, vitamin C and vitamin A kale is one of healthiest veggies out there. There are a number of varieties of kale that are both edible and used for ornamental gardening. The most common types of kale you will find at the grocery store are common curly kale and lacinato kale (also know and dinosaur kale, Tuscan kale or cavolo nero).

I love this kale dish as it is quite simple to prepare and makes a great side dish for everything from chicken to pork (like this pork tenderloin with bourbon apples). Like a lot of great dishes this starts with sauteing olive oil and garlic, along with sliced mushrooms (you can choose any type of mushrooms you like, from simple white button or portobello mushrooms to wild mushrooms like oyster, king trumpet or chanterelle). Add in chopped kale (I prefer lacinato but curly kale works as well) and broth, cover and cook for five minutes, stirring once or twice (the kale may look like it’s a lot but will reduce quite a bit as it’s cooking). Remove the pan from heat and squeeze fresh lemon juice over the kale.

Sauteed Kale and Mushrooms

Equipment

  • Large Skillet

Ingredients
  

  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 8 oz package of mushrooms sliced
  • 1 large buch kale (preferably lacinato) stems removed and coarsely chopped
  • 1/2 cup chicken or vegetable stock
  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 1 tbsp lemon juice juice from 1/2 a lemon

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add garlic and mushrooms to the pan and saute for 4 minutes or until mushrooms are tender.
  • Add kale, broth, salt and pepper to the skillet. Cover and cook for five minutes, stirring once or twice.
  • Remove pan from heat and drizzle in lemon juice. Serve as desired.

    I am in the midst of trying to collect a good list of side recipe for my mid week dinners. I’m finding that since I’m stuck at home, we are eating a lot of healthier as I do have a bit more time to cook. We love kale but we don’t always eat it enough. Love the combination with mushrooms. Yum!

    Great recipe. I had leftover kale and mushrooms from a casserole I made, found this recipe and zing! Letting it saute in the broth (i may have added a little wine) was just enough to soften the kale and keep the bright green color. The lemon on top – brilliant!

    I have never left a comment on a recipe before, and I have been googling recipes for YEARS since I didn’t know how to cook. This Sauteed Kale and Mushrooms is AMAZING! I think it might be the first recipe I have followed that actually came out tasting like restaurant food. Even my 14 year old daughter loved it, and she NEVER likes the veggies I cook. The squeeze of lemon at the end really takes the entire dish up a notch. 10 Stars! Thank you so much!
