The best weekend brunch recipes are ones that are full of flavor but simple to make and Dutch baby pancakes fit that bill. Take an easy batter that comes together in a snap, pop it in the oven until its golden and puffy and fill it with loads of fresh strawberries and you’ve got a breakfast that’s worth waking up for. This Strawberry Dutch Baby Pancake is easy to make and sure to brighten any morning.

What is a Dutch Baby Pancake?

Contrary to it’s name a Dutch baby is actually a German baked pancake. A common theory is that the German pancake got its new name in the 1940’s from a Washington state diner that turned the word “duetsche” into “dutch” .The batter for a Dutch baby is light and eggy, similar to a popover or a Yorshire pudding. The result is a baked pancake  that’s puffed up and golden, perfect for adding your choice of toppings. Strawberry Dutch Baby Pancake

Ingredients

  • Butter
  • Large eggs
  • Milk
  • Granulated sugar
  • Vanilla extract
  • All purpose flour
  • Baking powder
  • Cinnamon
  • Kosher salt
  • Strawberries, sliced

Cooking Tips

  • Ensure you have a hot skillet before adding the batter. This will give you a better chance at getting a beautiful, sky-high puffy pancake.
  • It’s normal for the Dutch baby to slightly deflate after you remove it from the oven
  • This oven baked pancake is best easten immediately

How to Make a Strawberry Dutch Baby Pancake

Strawberry Dutch Baby Pancake - Ingredients

The batter for a Dutch baby pancake couldn’t be easier to make. Blend up some eggs, milk, flour and a few other ingredients in a blender and you’ve got your batter. Alternatively you can also prepare the batter in a large bowl by whisking together the eggs, melted butter, milk and vanilla and then adding in the flour,sugar, cinnamon, baking powder and salt and whisking until the dry ingredients are incorporated.

In a cast iron skillet melt some butter and add half of the sliced strawberries. Pour the batter over the berries, pop the pan into the oven and bake for 12-15 minutes until golden and puffy. When you remove the pan from the oven the pancake will deflate some. Top the Dutch baby with the remaining strawberries and serve with a dusting of powdered sugar, whipped cream, homemade chocolate sauce or maple syrup.

Strawberry Dutch Baby Pancake

This Strawberry Dutch Baby, or oven baked skillet pancake, is easy to make and perfect for a weekend breakfast or brunch. Make this recipe for an easy strawberry puffy pancake for a quick and delicious breakfast.

Equipment

  • Blender
  • cast iron skillet

Ingredients
  

  • 3 tbsp butter, divided
  • 4 large eggs
  • 1 cup milk
  • 1 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1 cup all purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp kosher salt
  • 2 cups sliced strawberries, divided

Instructions
 

  • Preheat oven to 400 degrees
  • Melt 1 1/2 tbsp butter in the microwave (about 15-20 seconds). Add the melted butter, eggs, milk, vanilla extract , flour, sugar, cinnamon, baking powder and salt into a blender and and blend until smooth. Alternatively you can also prepare the batter in a large bowl by whisking together the eggs, melted butter, milk and vanilla and then adding in the flour,sugar, cinnamon, baking powder and salt and whisking until the dry ingredients are incorporated.
  • Melt remaining butter in a cast iron skillet over medium heat. Add 1 cup of the sliced strawberries and pour in batter.
  • Transfer skillet to the oven and bake for 12-15 minutes until pancake is golden and puffy. Remove from oven and top with remaining strawberries. Cut into 4-6 slices and serve with powdered sugar, whipped cream or maple syrup.

    I always wanted to try a Dutch baby, and this strawberry durch Baby recipe was my final inspiration to take a try on these! I don’t eat eggs, so this was a bit tricky to substitute – but it came out fine by using egg replacer!
