Pumpkin Crisp with Oat Crumble

This Pumpkin Crisp is a delicious alternative to pumpkin pie. A smooth pumpkin filling is topped with a generous layer of buttery oat and brown sugar crumble. Add a scoop of vanilla ice cream or a dollop of whipped cream and you’ve got a fall dessert that’s just as perfect for a weeknight treat as it is for Thanksgiving.

Pumpkin pie is on of my favorite Thanksgiving desserts, but sometimes I like to change things up with a more simple pumpkin dessert. This Pumpkin Crisp has all the classic pumpkin flavor and smooth texture I love, topped with a buttery brown sugar and oat crumble that adds just the right amount of crunch. It’s easy to put together, doesn’t require rolling out a pie crust, and is always a welcome addition to the dessert table. I especially love serving it warm with a scoop of vanilla ice cream as the topping melts into the pumpkin filling.

This pumpkin crisp recipe is a delicious dessert for any pumpkin lover! For more delicious pumpkin recipes take a look at my Pumpkin Tiramisu, Pumkin Basque Cheesecake and Bourbon Pumpkin Pie.

Ingredients

Pumpkin Crisp with Oat Crumble - Ingredients
  • Pumpkin puree
  • Brown sugar
  • Whole milk
  • Heavy cream
  • Large eggs
  • Vanilla extract
  • Ground cinnamon
  • Ground nutmeg
  • Ground ginger
  • Ground cloves
  • Kosher salt

For the Crisp Topping

  • Old fashioned oats
  • Brown sugar
  • All purpose flour
  • Ground cinnamon
  • Kosher salt
  • Chopped pecans (optional)
  • Unsalted butter, cold and cubed

Baking Tips and Variations

Use pumpkin puree, not pumpkin pie filling. Pure pumpkin gives you control over the sweetness and spices.

Use cold butter for the crumble. Cold, cubed butter creates that delicious crumble topping. Work it into the oat mixture with a pastry blender or your fingertips until large clumps form.

Add some nuts. Pecans are optional, but they add a lovely nutty flavor to the topping. Walnuts are another great option.

Use pumpkin pie spice. Use 1 teaspoon of prepared pumpkin pie spice in place of the cinnamon, nutmeg, ginger and cloves.

Make it your own. Add in 1-2 tablespoons of bourbon to the filling for a bit of a kick, or 1/4 cup of flaked coconut in the crumble.

Let it rest before serving. Give the pumpkin crisp at least 10 minutes to cool after baking. This helps the filling set and makes serving easier.

How to Make Pumpkin Crisp

  • Prepare the oven and baking dish. Preheat your oven to 350°F. Grease an 8×8-inch baking dish with butter or nonstick cooking spray.
  • Make the pumpkin filling. In a large mixing bowl, combine the pumpkin puree, brown sugar, whole milk, heavy cream, eggs, vanilla extract, cinnamon, nutmeg, ginger, cloves, and kosher salt. Whisk until smooth and fully combined. Pour the pumpkin mixture into your prepared 8×8-inch baking dish and spread it into an even layer.
  • Prepare the crumble topping. In a separate large bowl, stir together the old-fashioned oats, brown sugar, flour, cinnamon, kosher salt, and chopped pecans, if using. Add the cold, cubed butter to the oat mixture. Use a pastry blender or your fingertips to work the butter into the dry ingredients until the mixture forms large, crumbly clusters.

  • Assemble the crisp. Sprinkle the oat topping evenly over the top of the pumpkin filling.
  • Bake. Bake for approximately 50 minutes, or until the topping is golden brown and the pumpkin filling is set around the edges with just a slight jiggle in the center.
  • Cool and serve. Allow the pumpkin crisp to cool for at least 10 minutes before serving. Enjoy warm with a scoop of ice cream, whipped cream, or a drizzle of caramel sauce.

Storage and Reheating

Storage: Allow the pumpkin crisp to cool, then cover the baking dish or transfer leftovers to an airtight container. Store in the fridge for up to 4 days.

Reheating: For individual portions, microwave for 30 to 60 seconds or until warmed through. To reheat a larger portion, place the crisp in a 325°F oven until heated through.
