Looking for a dessert recipe that looks like it came from a fancy patisserie but came from your oven in and is done in under 45 minutes? I got you. These pastries are impressive enough that your friends and family will encourage you to apply to the next season of the Great British Bakeoff but thanks to frozen puff pastry and almond paste they are completely doable for those of us that aren’t pro bakers. Make a batch of these apple almond puff pastry rose tarts and let the accolades start rolling in.

What is puff pastry?

Apple Almond Puff Pastry Rose Tarts

Puff pastry is a laminated pastry that is made with layers of butter and dough, this creates a pastry that is light and flaky. If you have the time and inclination you can certainly make puff pastry from scratch but excellent puff pastry is available at the store and is a great shortcut for creating desserts and appetizers. You can find puff pastry in the freezer section; common brands include Dafour ( made with butter and my preferred choice) and Pepperidge Farm ( made with vegetable based fats and is vegan).

What is the difference between almond paste and marzipan?

Almond paste and marzipan are quite similar and often found near each other in the baking section of your supermarket. They are both made with almonds and sugar, though almond paste has a higher ratio of almonds and is less sweet. Marzipan is sometimes referred to as almond candy dough and is often colored and molded into shapes. You can use marzipan in this recipe but your tarts will be sweeter with a less pronounced almond taste.

How to make apple rose tarts

There are two things that will make these apple rose tarts their best. The first is to slice your apples very thin and a mandolin is your best bet though you can certainly get this with careful knife work. The second is ensuring your puff pastry is cold, this will make the dough easier to work with and make for a flakier tart.

In a bowl combine sugar, cinnamon salt and sliced apples and toss to coat the apples. Start by rolling out your puff pastry into a 12 inch by 12 inch square and cut into 1 inch long slices ( a pizza cutter works fabulously here). Next roll out the almond paste into a 6 x 10 inch square and slice into 1/2 inch long slices and then place an almond paste slice on each slice of puff pastry. Layer almond slices on top of puff pastry, leaving a 1 inch border on each end, and roll into a tight spiral. Place each tart into the cup of a muffin tin and then pop that into the freezer for 5 minutes ( cold puffy pastry bakes up much more flaky and tender) and then bake the tarts for 20 minutes. Let these cool for at least 5 minutes and enjoy.

Apple Almond Puff Pastry Rose Tarts

Equipment

  • 12 cup muffin tin
  • mandolin (optional)

Ingredients
  

  • 1 14-15 oz sheet of puff pastry size will vary by brand
  • 5 oz almond paste
  • 2 medium apples, thinly sliced
  • 2 tsp sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • AP flour for dusting

Instructions
 

  • Preheat oven to 400 degrees. Combine sugar, cinnamon and salt in a large bowl and stir until well mixed. Add sliced apples and toss to combine.
  • Lightly dust flour over your work surface and roll puff pastry into a 12 inch by 12 inch square. Cut the puff pastry into 12 1-inch strips and set aside. Dust work surface with flour and roll out almond paste into a 6×8 inch rectangle, cut this into 12 1/2 inch strips.
  • Top each puff pastry strip with a strip of almond paste, layer apple slices lengthwise over this leaving a 1 inch space on each side of pastry. Tightly roll up each pastry into a spiral and place into the cup of the muffin tin. Once all the tarts are rolled placed the muffin tin in the freezer for 5-10 minutes.
  • Bake tarts for 20 minutes, cool for 5 minutes before serving.
