Ingredients
  

  • 1 tbsp olive oil
  • 1 large onion, diced
  • 1 cup shredded carrots about 2 large carrots
  • 2 stalks celery, chopped
  • 1 15 oz can cannellini beans
  • 1 pound broccoli florets about 4-5 cups divided
  • 4 cups vegetable or chicken broth
  • 2 cups shredded cheddar cheese
  • 1 tsp kosher salt or to taste
  • 1 tsp black pepper or to taste

Instructions
 

  • Heat olive oil in the Instant pot on ‘Saute’ setting. Add onion, carrots and celery and cook for 3-4 minutes until onions are translucent.
  • Add cannellini beans, half of the broccoli florets and broth. Seal the lid, select 'Manual' setting and High Pressure, then set cook time for 1 minutes. Once the soup is done cooking perform a quick release per manufacturer's instructions.
  • Use an immersion blender to puree the soup until smooth.  (Or you can puree the soup in a traditional blender in 2-3 batches, taking care when working with the hot liquid. Return the pureed soup to the Instant Pot). Stir in the shredded cheddar and remaining broccoli and cook until the cheese has melted and broccoli has warmed through.
  • Divide into 4-6 bowls and serve as desired.
