Add gelatin, water and sugar syrup to a stand mixer and whisk until light and fluffy. Whisk in the vanilla extract and salt.
Spread marshmallow mixture into aa pan and allow to rest for several hours. Cut into 1x1" squares (or 2x2" squares) and toss with a mixture of powdered sugar and cornstarch to coat.
